Does anyone have a good recipe for pickled quail eggs. At the moment I am experimenting with different types of vinegars and herbs to put my hard boiled quail eggs into.

I read the other day that supermarkets have started to sell hard boiled eggs - as a convenience food!
Pickled quails eggs could have so many uses - picnics, salads etc..
I have never done it & I thought my aunt used waterglass - but can't find any reference to it on the net. I will investigate!

Hi Topveg, Thanks for this information. Another friend mentioned waterglass to me but I had never heard of it.
Quail eggs are great hard boiled for picnics as you say and we use 6 in a salad. Quail eggs can also be fried, poached or scrambled and I am currently experimenting with different recipes. here are a few on my Hugo House website for my quail and guinea fowl eggs. http://hugohouse.co.uk/recipes/

Hi Sara
When I looked waterglass up, it seems to be used in the manufacture of car engines - & I can vaguely remember the taste of sulphur in the eggs - so probably best not to persue that one!
Mrs Beeton uses ginger in her pickled egg recipe...
HugoHouse looks great - we have had quail's eggs with samphire - & it was absolutely fantastic. 2 strong flavours but they complimented each other.
Hope you get some good pickling suggestions from other forum members
