I am often asked if you can eat duck eggs and use them in cooking and baking.

Personally I think duck eggs are the best for boiling, frying, poaching, scrambling etc etc and make the best egg mayo ever. A hen egg can’t touch it! Use them wherever you’d use a hen egg.

We were always told that duck eggs make the best cakes, and they were sought after by the famous cake makers in the village!

Yes cake making with duck eggs is good – my blueberry muffins are tasty! Just have problems with Yorkshire puddings, not sure why but they won’t rise and you don’t want to go swimming afterwards!!!!

I find that whenever I have any duck eggs available and am baking cakes, muffins etc. I always substitute one for one of the eggs and the batter is richer in both colour and texture and the taste is enhanced as well!

I love them in homemade noodles and dumplings. They are way better than the noodles made from my chicken eggs.
