Steamed Vegetables – A Reader’s Recipe
I like to steam all my veggies in the microwave as they keep all their flavours better.Here’s a mixture I do in the microwave. Steam a few new potatoes (10mins), some courgettes (3mins), some sugarsnaps (2mins).
Then saute some leeks and red/green/yellow and red peppers in butter in a pan. Add the potatoes, courgettes and sugarsnaps and a handful of pinenuts for some extra crunch.
Place all the veggies in an open dish. Eat on their own…or with anything you like such as meat/fish/chicken.
